Last night we made this amazing dinner! Let me just say, not everything I make comes out great, but in this case it came out pretty darn good. The reason I love this recipe so much is because it’s a great mixture of healthy carbs and proteins.
Vegan Lentil Dinner
One of the tricks is to not cook your vegetables too much. Just lightly steamed. Why? Because anything over 40 degree and you lose all the enzymes and anything over 200 degrees and you lose most if not all of the nutrients. So I usually cook everything for just 2-3 minutes of steaming and that’s it. Expect the lentil and sweet potato.
Here’s the break down:
- Indian spice
- Fresh tomatoes
- Sweet potatoes with cinnamon
- Nutritional yeast
- Coconut oil
