Friday night here was Vegan Burrito night baby! The Vancouver Canucks game was on so we make some killer vegan burritos that tasted absolutely amazing and were really easy to make. We had some friends over and chowed down on a total feast! Quick note, stay with the mild salsa because the hot is ON FIRE! lol

The vegan burritos recipe is really easy. It only took about 15 minutes to make and tastes awesome. I usally don’t eat a ton of cooked foods while training but today was Friday, and like I said the Vancouver Canucks game was on.

There are so many alternatives with vegan burritos recipes but I love this one. Quick easy and tastes awesome!

The Vegan Burrito Recipe

 

  • Rice burrito wraps
  • Organic spiced pinto beans
  • Organic salsa (hot or medium)
  • Sprinkle of Nutritional Yeast
  • Salt/ pepper

The guacamole was amazing too! We mixed some peas in there which was kind of trippy because they were whole, but whatever. Tasted really good and that was the first time we did that.

Vegan Burrito Guacamole Recipe

 

  • 1 avocado
  • 1 cup cooked green peas {cooled}
  • 1/2 tsp sea salt
  • 1 clove garlic {minced}
  • 1/2 tsp ground cumin
  • 1 tbsp lemon juice
  • pepper to taste

Cook your peas and let them cool. Place all the spices, garlic, and avocado in a bowl. Add in lemon juice and peas and mash.  {Use in a blender to make extra creamy!}

    Simple, meatless Mexican food is just as tasty as the greasy, cheesy stuff you get slopped on your plate in a restaurant, plus you feel light as a feather after!
